Tray-baked vegetables

Zucchini, pepper, eggplant and potato on one tray — colourful, filling and almost hands-off.

Ingredients

  • 1 zucchini
  • 0.5 kg california pepper
  • 0.5 kg eggplant
  • 0.5 kg potato
  • 2 onions
  • 4 cloves garlic
  • 4 tbsp olive oil, salt, rosemary

Method

    Wash the vegetables and cut into large bite-sized pieces.

    Toss in a tray with the olive oil, salt and crushed garlic.

  3. 3

    Spread in a single layer and roast at 200 °C for 35-40 minutes, turning halfway.

    Finish with rosemary and serve on its own or as a side.
