Grilled summer vegetables

Courgette, pepper and aubergine on the grill — summer's simplest yet most striking side, from just a few ingredients.

Ingredients

  • 1 courgette
  • 0.5 kg bell pepper
  • 1 aubergine
  • 2 onions
  • 3 garlic cloves
  • 4 tbsp olive oil
  • salt, pepper, fresh basil

Method

    Slice the courgette and aubergine into ~1 cm rounds, cut the pepper into large wedges and the onion into thick slices.

    In a bowl, toss the vegetables with the olive oil, crushed garlic, salt and pepper.

    Grill (or use a griddle pan) over high heat for 3-4 minutes per side, until nicely charred.

    Serve fresh, scattered with basil — as a side or on its own with fresh bread.

Tip

Tip: whatever's in season — mushrooms, cherry tomatoes, kapia pepper — can go on the grill too.
