Courgette fritters
Crispy fritters from grated courgette — quick, budget-friendly and a hit with kids.

Ingredients
- 2 courgettes
- 2 eggs
- 2 garlic cloves
- 5 tbsp flour
- oil for frying
- salt, pepper
Method
- 1
Grate the courgettes, salt them and leave for 10 minutes, then squeeze out the liquid.

Mix with the eggs, crushed garlic and flour, season with pepper — aim for a medium-thick batter.

Fry spoonfuls in hot oil for 2-3 minutes per side until golden.

Drain on paper towel and serve with sour cream or garlic yoghurt.
