Red lentil soup

A filling, protein-rich lentil soup with carrot — a squeeze of lemon makes it really fresh.

Ingredients

  • 200 g lentils
  • 2 carrots
  • 1 onion
  • 2 cloves garlic
  • juice of 0.5 lemon
  • salt, cumin, oil

Method

    Sauté the onion and diced carrot in oil.

    Add the lentils, garlic and cumin, and pour in 1 litre of water.

    Simmer gently until soft (about 20-25 minutes).

    Squeeze in the lemon juice at the end, season, and blend if you like.
