Broccoli cream soup
A bright green, vitamin-rich cream soup of broccoli and potato — quick and light.

Ingredients
- 1 head broccoli
- 2 potatoes
- 1 onion
- 2 cloves garlic
- salt, pepper, oil
Method

Sauté the onion in oil and add the diced potato.

Cover with water; after 10 minutes add the broccoli florets and garlic.

Cook until soft (about 8 more minutes) so the broccoli stays bright green.

Blend until smooth, season, and serve right away.
