Chilled cucumber soup

A refreshing chilled yoghurt soup with cucumber and dill — for hot days.

Ingredients

  • 2 cucumbers
  • 2 cloves garlic
  • 500 ml yoghurt
  • dill, lemon, salt

Method

    Grate the cucumber (leave some diced for texture).

    Mix with the yoghurt, crushed garlic and chopped dill.

    Season with lemon juice and salt, thin with a little cold water.

    Chill for at least 1 hour before serving.
