A filling, protein-rich salad of chickpeas with tomato and cucumber — a meal on its own.

Ingredients

  • 500 g cooked chickpeas
  • 0.5 kg tomato
  • 1 cucumber
  • 0.5 red onion
  • olive oil, lemon, parsley

Method

    Dice the tomato and cucumber, chop the red onion.

    Combine with the chickpeas in a bowl.

    Drizzle with olive oil and lemon juice, season.

    Scatter with fresh parsley and serve.
